Welcome to my What I Ate Wednesday post, where I share a day of my healthy eats. I have been doing Weight Watchers since October 2013, and I have lost 31.2 pounds so far. So let’s get on with the eats! For breakfast I had two eggs scrambled (4pp) with chives sprinkled on top. I grow these in my herb garden. I also had a piece of light wheat toast (1pp) and some organic strawberries. I had two cups of coffee with half and half, plus sugar (2pp for the two cups).
For lunch I made a spinach salad with some leftover chicken breast (4pp), mozzarella cheese (2pp), baby bella mushrooms with home-made honey mustard vinaigrette (2pp).
For snack I made a 2pp smoothie with my Nutri Bullet: spinach, banana, pineapple, greek yogurt (1pp) and almond milk (1pp).
For dinner we had meat loaf (8pp), mashed potatoes (4pp) and green beans. I also had a piece of Dove dark chocolate (1pp – not pictured).
I am a big believer that eating healthy doesn’t have to be painful. In fact, if done right, it can be delicious and enjoyable! And that is the mission of my site – to help myself and others find ways to make better choices so that our food can be delicious, enjoyable and healthy. What does eating healthy feel like to you?
