Happy What I Ate Wednesday! Where I share a day of my healthy eats. I have been doing Weight Watchers since October, and I am down thirty pounds so far, so YAY! I actually lost a good bit of weight before ever starting. You can read more of my back story here, FYI.
For breakfast this particular day I had egg whites (1pp) scrambled with mushrooms and bell pepper on light wheat (2pp) with thin cheddar (1pp) and a slice of Applegate Farms organic uncured ham (0pp for the single slice)
For lunch I had a single serving of cranberry almond chicken salad (4pp), wasa crackers (1pp), and a big side salad with goat cheese (1pp), strawberries and my home-made single serving balsamic vinaigrette (1pp). Yum! I know this combination has showed up in my past WIAW posts. It is just so good.
After lunch it has become customary for me to have a Dove dark chocolate promise (1pp) and an my DIY iced coffee (1pp). I had to dig up a recycled picture, because I forgot to take one!
Snack was a smoothie in my Nutribullet: Banana, spinach, mango, greek yogurt (1pp), chia seed (1pp), and almond milk (1pp).
Dinner was crock pot chicken enchilada soup (7pp, plus 1pp for sour cream). I love Skinnytaste so much! All of her stuff is just so good, and she and I have similar views on food. By the way, I just pre ordered her new yet-to-be-released cook book on Amazon, The Skinnytaste Cookbook. It doesn’t come out until October, but I just know it’s going to be awesome. *Insert giddy fangirl squeal here*
Not pictured below, but we also had some corn bread made in the cast iron skillet (3pp). After dinner, I realized I had 1pp left for the day, so I had another Dove dark chocolate promise (1pp, not pictured).
