Happy What I Ate Wednesday! I’ve got a lot of good eats to share with you today, so let’s get right to it.
Breakfast was one egg (2pp) scrambled with some pourable whites (1pp) with chives from my garden. Side note: I am working on a series of gardening posts. Coming up will be my first post: Herb Gardening 101. Herbs are a fantastic way to add lots of fresh flavor without adding calories or points. Plus they make you feel all fancy! Ha! So stay tuned for that coming up on Friday.
But back to breakfast…I also had a piece of light wheat toast (1pp) and grapes. I had two cups of coffee with half and half and sugar (2pp for the two cups).
I was able to take an early lunch to get out and get some miles under my belt for the #hmp100milesamonth challenge. It was a beautiful day, even though it was a little bit on the cool side.
When I got back, I searched the refrigerator for lunch. Sometimes I will just use leftovers thrown together with whatever else I have and hope it turns out alright! This was definitely one of those days. I had a leftover turkey burger patty (3pp) on a salad with baby bella mushrooms, kale sprouts, reduced fat Mexican blend cheese (2pp), salsa and single serve guacamole (2pp). It was surprisingly tasty.
I was craving chocolate, so I made myself a little low points dessert: I put light whipped topping (1pp) on a Chocolate Vitacake (1pp) from Vitalicious. These are incredible! I can’t believe they are only one little point and 50 calories! I could not find these in my local supermarket, so I order mine online here.
I also made a little DIY iced coffee to go along with it (1pp). The point is for some sugar and skim milk. I put it in my reusable Copco Tumbler to make it feel like it came from a coffee shop.
For snack I had a 3pp smoothie that I whipped up in my Nutri Bullet. Today was banana, frozen unsweetened strawberries, frozen unsweetened blueberries, coconut milk (1pp), Greek yogurt (1pp) and chia seed (1pp). It was so delicious and filling. And I also had a Dove miniature dark chocolate (1pp).
For dinner I made a recipe from the new Weight Watchers cookbook, Tilapia with spinach and grapes (5pp). It was totally out of my norm since I have never cooked grapes before. It was good! And my husband like it too. I paired it with garlic parmesan cheese grits (5pp).
