Happy What I Ate Wednesday (WIAW), where I share a day in the life (of eats anyway!) on Weight Watchers.
Breakfast was one whole egg (2pp) scrambled with some pourable whites (1pp), turkey sausage crumbles (1pp), red bell pepper and reduced fat cheddar (1pp). I had one slice of light wheat toast (1pp) and two clementines to go with it. I also had two cups of coffee, which are 2pp for the cream and half-and-half. I always measure this out to be sure I am tracking correctly!
Lunch was leftover turkey vegetable soup (7pp). I always add hot sauce to my soup! I also had a side salad with strawberries, feta cheese (1pp) and my home-made single serving balsamic vinaigrette (1pp plus counts as 1 healthy oil).
Snack was PB2(1pp for 2 tablespoons) on a light flatout wrap (2pp) with strawberry and banana. Very filling and delicious!
Dinner was one of my easy week-night go-to’s – spaghetti. I did not home-make my sauce this particular night since I needed a quick dinner. I did do a little trick to volumize. I sautéed some onions, baby portabellas and garlic to add to the sauce (I used bottled), along with some lean ground beef. This makes it feel a lot more substantial. It also stretches our ground beef a little further. I try to buy organic beef, so making it stretch helps offset the cost.
My serving came out to 9pp, and it was a hearty serving! I ate it with a piece of garlic toast made with light wheat bread (1pp) and a side salad with home-made apple cider vinaigrette (1pp).
I am just thrilled with my progress on Weight Watchers. As of my last weigh in, I am down 24.4 pounds since starting Weight Watchers, and over 50 pounds since the birth of my son. For more of my back story, see my About page. For my favorite tools for success, check out my Resources page.
