I hope y’all are having a great week! Today is What I Ate Wednesday (WIAW)! I am sharing a day in the life on Weight Watchers, where you can see what I eat for a day. Just to give some context to this day of eats, I was sick. So my appetite was somewhat lower than it usually is. And my eats weren’t as balanced as they usually are. But, I am posting them anyway. Real life!
Also, since this is a Simply Filling (SF) week I will only note points for the foods that are not SF. On SF you can eat until satisfied from a list of foods without having to measure or count points. You can have anything else as long as it fits into your 49 weekly “extra” points for the week. You can read more about SF on the Weight Watchers site here.

Breakfast: Sometimes you just can’t beat plain scrambled eggs. I had two of them, and I paired it with light wheat toast and berries. All of that is SF so I did not count points. Not pictured was my coffee. I had two cups with skim milk and sugar (1pp for the two cups).
Lunch time rolled around, so I started perusing the refrigerator to see what leftovers I had on hand. I am trying to get better about not wasting food. So I spotted a little bit of turkey chili leftover. It wasn’t quite enough for a serving, so I decided to make it a topping on a baked sweet potato. It was SO good, y’all. I also has 2 tablespoons of light sour cream (1pp), some scallions and cilantro (left over from another meal) and some hot sauce sprinkled on top.
I did weigh the potato, just to give you an idea of size. It was 9.4 ounces. Some sweet potatoes can be pretty large! This one I would say was small/medium-ish. On a normal day, I probably would have had something else to go with it like a side salad or some fruit. Or both! But like I said, my appetite wasn’t that great while being sick.
As the day went on, I felt worse. So I went to see my doctor, where they tested me for strep and flu (both negative!). Turns out it was just a wicked awful sinus infection with fever. So I got a shot in the rear and some antibiotics. I am already feeling better, thankfully.
Because of my appointment, I did not have a snack. Honestly, I probably would not have been hungry for it anyway.
You guys may know that I have started sharing my weekly meal plan. Well this was on of those days where real life interfered. We were supposed to have Greek fish, which turned my stomach. Plus I was later getting home because of the doctor’s appointment.
So I improvised. I had boiled some chicken the day before. I had it already cooked in the fridge to make chicken salad. I also had saved the broth from that as well. So I used that to make some home-made chicken noodle soup instead. I was lacking some of my basic ingredients, like celery and parsley. But I made it anyway! And it turned out pretty good (and all SF). Forgive the fuzzy photos. They were taken with the iPhone, rather than the DSLR. I made some grilled cheeses for all of us to eat with it. I used 1pp for some 2% cheese on my sandwich.
All you moms out there know that the child’s needs don’t change just because Mama is sick. So I pushed through feeling awful to bathe my son and put him to bed. While I was getting little buddy his bath, my hubby did the dishes. He does this every night, and I am thankful for his help!
Then he went to go pick up my prescriptions for me at CVS. While he was gone, I dug in to my Brownie Brittle. This was a free sample sent to me through Klout and Sheila G’s.
It was SO good, yall. I had the chocolate chip flavor, but I see that there are also several other flavors: Salted Caramel, English Toffee, and Mint Chocolate Chip. I am not sure about the points of the other flavors, but they sure sound yummy!
I weighed out a serving which was 3pp. It was like a cross between a cookie and a brownie. While I would not consider this a health food, it was a yummy little treat. And there is nothing wrong with that every once in a while! 3pp is really not bad, either.
