Happy Wednesday! Every What I Ate Wednesday (WIAW) I do a day in the life of my eats on Weight Watchers. I have gotten tons of positive feedback, so I am very happy this is helpful. I have picked up some new followers lately. So if you are new and would like to see my WIAW history, go here.
Just as a reminder, I am doing Simply Filling (SF) this week. SF is an alternative to the traditional (and more popular) tracking method of Weight Watchers. You can read more about that here. I will only note points for the foods that had to be subtracted from my 49 point weekly extra points balance. I’ve got lots of good stuff to share with y’all today, so let’s get right to it.
I have been on an oatmeal kick during all of this winter weather we have been having. I have also been perfecting my oatmeal recipe. Here is my recipe and method at the moment:
- 1/2 cup old fashioned oats
- 1 tsp chia seed (0pp for this serving size)
- 1/2 cup skim milk
- 1/2 cup water
- 1/4 tsp of vanilla
- dash of cinnamon
- dash of salt
- 2 tsp sugar (1pp)
Mix all ingredients in a microwave safe bowl, and cook on high for 2.5 or so minutes (microwave times may vary!). Let sit in the microwave for 5-10 minutes to thicken. Top with berries. Since organic strawberries were on sale at my local store this week, that is what I topped my oatmeal off with today. It was so delicious!
Not pictured was the banana that I split with my toddler as I was feeding him, plus two cups of coffee with skim milk and sugar (1pp) for the sugar in the two cups.
For lunch I had some leftover grilled chicken that I sliced up and put on a sandwich with thin cheddar (1pp). I had a spinach salad with my homemade single serving balsamic vinaigrette (1 of my 2 daily allotted healthy oils on SF, no points counted), a side of watermelon and a fat free Greek yogurt for dessert.
If you have been following me for some time, you know that one of the major lessons learned from doing Weight Watchers is the power of small, consistent baby steps.
I have experimented with applying that same approach to other things I have been putting off. So right now I am dedicating 15 minutes a day to de cluttering my house! I set the timer on my iPhone and I dedicate 15 minutes of uninterrupted time to organizing.
It has become a game. How much can I get done in 15 minutes? On this particular day, I cleaned out the diaper bag.
When I finished that I still had 7 minutes left to spare on the timer, so I tackled one of our storage drawers in the kitchen.
All that de cluttering worked up an appetite, so I made myself a snack. Snack was my DIY microwave popcorn. This is a great way to work in some healthy oil. I used a teaspoon of canola oil, and it made the popcorn oh-so-tasty!
I picked little buddy up from school. He has been going through a clingy phase where he doesn’t want me to put him down. This makes preparing dinner a challenge! So I distracted him with some measuring cups. Worked like a charm.
If I can ever get him settled like this, he loves to be in the kitchen with me. We turn on Pandora to the oldies station, and we sing and dance while I prepare dinner. Maybe I will capture his dance moves one of these days. So funny!
When I finish prepping everything, he loves me to hold him and explain what I am doing. He smells all the spices, and he imitates the sounds of the pressure cooker and sizzling sounds. 17 months is such a fun age!
Dinner was layered fiesta bowls. Basically I seasoned up some ground beef with taco seasoning, and I layered it in a bowl with a whole bunch of other stuff. Greens were on the bottom. The next layer was Cilantro Lime Quinoa, followed by the beef, pinto beans reduced fat cheddar (1pp), avocado (2pp), tomatoes and salsa. I topped the whole thing off with scallions and more cilantro. It was so good!
